Does anyone know who the person Edmund Fitzgerald was? Or how he came to have the boat named after him?

The companion boat in the last radio contact with the Fitz was the Arthur M. Andersen, which probably was named for the same financier who founded the Arthur Andersen accounting firm (although I do not know this, just guessing).

Please don't tell me that the two-legged Edmund Fitzgerald was an accountant!?! Or was he?

Well, you're not far off. He was the Chairman of the insurance company that financed the building of the ship. I believe the company was Nortwestern - whatever, it was out of Wisconsin I believe.
